Delicious little superfood treat

I only had a couple of days before traveling to Sweden for Christmas and I simply couldn't fit in one more trip to the mall or any other shopping department...


But I wanted to hand out some little delicious treats to some special people before flying to the northern hemisphere.


Looking through the cupboard I realise I had some bits and pieces that would nicely go together and then THIS happened, try it and try to stop yourself from eating it all. I better make my deliveries NOW before there's none left!


  • Toast 1 cup of Oats, 1 cup of your choice of nuts, 0.5 cup of mixed seeds (pumpkin, sesame, sunflower, chia) -all in a pan or oven

  • Chop 0.5 cup of crystallised ginger and add to the dry ingredients.

  • Add 1 teaspoon of cinnamon, 0.5 teaspoon of ginger, 0.5 teaspoon of clove + some sea salt.

  • Melt 200g of dark 70% chocolate + 2 table spoons of coconut oil (I did it over water-bath).

  • Stir the dry and wet all together and scoop in to a mini cupcake tray OR spread in a baking tray (on top of baking paper).

  • Sprinkle some coarsely chopped Goji Berries on top.

  • Put in fridge to set completely (2hrs).
