A Balanced Bite

Sweets can be part of a balanced diet for sure and here is just one example.

As always with my baking, it's done spontaneously on an impulse and without exact measurements. Trust your intuition. And enjoy!




3/4 Cup Lentil Flour

1 Cup Oats

4 tbsp Acai Powder

1 tsp Baking Powder

1 tbsp Ground Ginger

2 tbsp Pumpkin Seeds

6 Dates

1 Banana

2 Eggs

1/3 Cup Coconut Oil

+ some sprinkles for decoration


Blend the dates, eggs and banana together.

Melt the coconut oil and add.

Mix all the dry ingredients and add that too before slowly blending again.


Scoop a big table spoon or two out on to a oven tray with baking paper.

Sprinkle the topping and bake in 180 degree oven for 20 mins.
