Struggle builds character + Chocolate Cookies

Ok it's time to get raw and share a small blog -it's been... what, a year since last blog post?!?!?!?

And looking back at that particular one, I actually wrote about 'fears'. Funny enough, the ebb and flow of life took me along on exactly one of my fearful waves -injuries that prevent me from joyful and fulfilling activities. It even in my head, when I write and think this, sounds so small and insignificant. But what has made it into something all consuming and rather life altering is my own mindset!

The reality is that at some point in life, we all go through struggles. And I believe we get to choose how we respond to it. We have the power to build an unstoppable mindset. Any successful (endless versions!) person alive today is a testament to that infinite capacity of the human potential.

The thing is, I thought I had it, for sure!!! This is what I teach and preach, and authentically so.

Thankfully my yoga practise is steady and strong, which allows some clarity and space to look beyond the physical house for my soul.

I like to think about it in this way; Like any other muscle in our body, the ability to overcome challenges needs to be worked out. This ability is, perhaps, the most important muscle to build, because it gives you the confidence to face any challenge life throws your way.

As it is in human nature to want to connect and belong to a community, please share any comments, any tips and tricks and life stories. I would love to hear other strategies that have worked for you to overcome difficulties. If you have something you are struggling with, please share it too so together we can figure out how to get to the other side.

CHOCOLATE COOKIE

Chocolate Cookie

3 Cups Oats

1 1/2 Cup Wholemeal Spelt Flour

3/4 Cup Coconut Sugar

2-3 Tbsp Raw Cacao

1 Teaspoon Cinnamon

1 Teaspoon Baking Soda

3/4 Cup Coconut Oil

1 Banan (mashed)

2 Flax Eggs (1=1 Tbsp Flax Seed + 1 Tbsp Chia Seed + 5 Tbsp Water)

1/4 Cup Raw Cacao Nibs

Pinch of Salt

Preheat oven to 175 degrees.

In a small bowl, combine the ingredients for the Flax Egg and set aside for 10 minutes. You can mash and mix the banana in there too.

Melt coconut oil.

In a larger bowl, combine oats, flour, cacao, cinnamon, baking soda, sugar, salt.

Add the wet ingredients and mix.

Line a baking tray and scoop out rounded tablespoons of the mixture (or get your fingers licking friendly messy). Bake for 10-15 minutes.
